Coconut Rice
1 cup organic basmati rice (white basmati takes less time to cook. Please soak or rinse several times to remove excess starch)
1 cup coconut milk
3/4 cup water
1 med onion chopped fine
1/2 cup of parsley or cilantro chopped fine
1 Tablespoon shredded ginger
1/2 unsweet organic coconut
1 Tablespoon coconut oil
2 Tablespoon butter
Sautee onions in oil and 1 Tablespoon butter until just past translucent. Add ginger and rice and cook another 5 mintes. Add milk and water and parsley and cook another 5 minutes. Bring to a boil and then turn the heat back to simmer and cook until moisture is absorbed, about 20 minutes. Turn heat off and allow to sit 15 minutes. Add 1 Tablespoon butter and fluff with fork.
